Ingredients

4 chicken breasts
3 chicken bouillon cubes
1/2 onion
1 cup sour cream
1 teaspoon garlic salt
2 teaspoons chili powder
1 can diced green chilies
1 1/2 teaspoons cumin
1 cup cheese , divided
6 -8 flour tortillas
Lynda's Chicken Enchiladas is a Tex-Mex dish that encompasses the richness of chicken and the lusciousness of sour cream. Chicken is infused with bouillon cubes, which elevates its flavor profile. Flour tortillas spread with a mixture of onion, spices, and cheese, are stuffed with shredded chicken and baked in a deliciously seasoned broth. Loaded with melted cheese, this dish is a treat for cheese lovers. Served hot in a baking dish, these enchiladas make a perfect family dinner or a potluck addition that can never go wrong.

Instructions

1.Preheat oven to 350°F (180°C).
2.In a saucepan, bring chicken breasts and bouillon cubes to boil. Reduce heat and simmer for 25 minutes.
3.Remove chicken and shred. Reserve broth.
4.In a skillet, sauté onion until tender.
5.Add sour cream, garlic salt, chili powder, green chilies, cumin, and 1/2 cup cheese to skillet. Heat through and mix well.
6.Dip tortilla in reserved broth and place in baking dish.
7.Spread 2 tablespoons of filling down the center of tortilla. Roll up and place seam side down in baking dish. Repeat.
8.Pour remaining broth over the top of rolled tortillas. Sprinkle with remaining cheese.
9.Bake for 25 minutes or until sauce is bubbly and cheese is melted.
