Ingredients

500 g all-purpose flour ( maida )
1/2 kg dried powdered milk ( khoya )
6 tablespoons oil or 6 tablespoons ghee
oil or ghee , to fry
200 ml water
200 g dates
200 g almonds , cut into thin strips
2 cups sugar
2 cups water
3 -5 saffron strands
yellow food coloring , as required
Dates and almond gujias are one of the most popular festive snacks in India, especially during the festival of Holi and Diwali. These moon-shaped gujias are sweet, crispy and have a delicious filling of almonds and dates. These gujias are deep-fried and then soaked in sugar syrup to give them a sweet and flavorful taste. They are perfect for festive occasions and make a great dessert option for a dinner party.

Instructions

1.In a large bowl, mix together flour, powdered milk and oil/ghee till the mixture is crumbly in nature.
2.Gradually add water and knead it into a soft dough.
3.Cover the dough and keep it aside for about 30 minutes.
4.In a pan, take 2 cups of water, add sugar, saffron strands and yellow food color. Cook it on low heat to make sugar syrup.
5.In another pan, roast the almonds for about 3-4 minutes on low flame. Keep them aside.
6.In the same pan, add chopped dates and roast till they are caramelized. Keep aside.
7.Once the dough is rested, divide it into small balls and flatten them.
8.Add the almonds and dates in the flattened ball, fold it into half-moon shaped gujia and seal the edges.
9.Heat the oil/ghee in a deep pan and deep fry them on low to medium flame, till they turn golden brown in color.
10.Once fried, take out the gujias and dip them in the prepared sugar syrup.
11.Allow them to soak for about 2 minutes, then serve it hot or at room temperature.

PROS

Dates and almond gujias are a perfect snack that is packed with essential vitamins and minerals.

It is a great festive treat and can be easily made at home with simple ingredients.

CONS

Since gujias are deep-fried, they are high in calories and are not suitable for people with diabetes.
