about 20 dried arbol chile
1 tablespoon/ 15 ml olive oil

4 boneless pork chops
4 oversized flat tortillas
2 tablespoons/ 30 ml lard ( optional ) or 2 duck fat ( optional )
1/2 cup/ 125 ml refried black beans , pureed
1 avocado , sliced
hot sauce
1 cup/ 250 ml grated oaxaca cheese
shredded lettuce
onion , shopped
tomatoes , diced
fresh cilantro , chopped

Instructions

1.In a dry skillet over medium heat, toast dried chiles until fragrant and lightly browned, about 2 minutes per side. Remove stems and seeds from the chiles and transfer to a bowl.
2.Bring a pot of salted water to a boil over high heat. Add pork chops and cook until browned and cooked through, about 8 minutes each side. Remove from the pot and let cool slightly before shredding with a fork.
3.Preheat a griddle or large non-stick skillet over medium heat. Spread lard or duck fat on one side of each tortilla and place it on the griddle, fat side down. Cook for about 1 minute or until crispy and lightly browned. Remove from the griddle and place on a plate.
4.On the second side, spread the pureed beans and hot sauce over the tortilla, then add the shredded pork, avocado slices, shredded lettuce, onion, tomatoes, cilantro, and grated cheese. Fold the tortilla in half and return to the griddle. Cook for about 2 minutes per side, or until cheese is melted and tortilla is crispy.
5.Serve hot with additional hot sauce or salsa on the side.
