1 egg , slightly beaten
3 tablespoons chopped white onions
1 tablespoon soy sauce
1 teaspoon sugar
1/2 teaspoon salt
1 pinch pepper
1 teaspoon cornstarch
2/3 cup water
1/4 cup sugar
1/4 cup apple cider vinegar
2 tablespoons fish sauce

Instructions

1.In a large mixing bowl, combine the ground pork, shrimp, carrot, celery, parsley, garlic, egg, onions, soy sauce, sugar, salt, pepper, and cornstarch.
2.Mix all the ingredients together thoroughly so that the meat and vegetables are evenly distributed throughout the mixture.
3.In a small saucepan, combine the water, sugar, apple cider vinegar, and fish sauce.
4.Stir the mixture until the sugar is fully dissolved.
5.Heat up a frying pan filled with about an inch of oil on medium high heat.
6.Lay a spring roll wrapper in front of you on a flat work surface with one corner facing you.
7.Place about a tablespoon of the pork mixture onto the corner of the wrapper closest to you.
8.Roll the wrapper away from you over the filling and tuck in the sides to form a tight cylinder.
9.Repeat until all the mixture has been used up.
10.When the oil is hot, carefully place the wrapped spring rolls in the pan and cook until they are golden brown on all sides.
11.Remove the spring rolls from the oil and place them on a paper towel-lined plate to drain.
