Ingredients

25 spring roll wrappers
1 lb ground lean pork
3 garlic cloves , minced
1 onion , minced
1 medium carrot , peeled and grated
1/2 cup celery , diced into small pieces
2 tablespoons soy sauce
1 egg
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 egg white , for sealing rolls
2 -4 cups canola oil ( for frying )

Instructions

1.Heat canola oil in a deep fryer or heavy bottomed pot over medium high heat.
2.In a medium sized bowl, mix together pork, garlic, onion, carrot, celery, soy sauce, egg, salt and pepper until well combined.
3.Lay spring roll wrapper flat on a clean surface and spoon 1 tablespoon of pork mixture down the center of the wrapper.
4.Fold the bottom of the wrapper over the mixture, then fold in the sides of the wrapper and roll up tightly.
5.Brush the remaining corner of the wrapper with egg white to seal.
6.Repeat with remaining meat mixture and wrappers.
7.Fry the rolls in batches for 3-4 minutes, or until golden brown and crispy.
8.Drain on paper towels.
9.Serve hot with sweet and sour or soy sauce for dipping.
