Ingredients

1 lb pork ( ground )
1 lb shrimp ( finely chopped )
1 cup water chestnut ( chopped )
1 cup green onion ( finely chopped )
2 teaspoons salt
2 teaspoons black pepper
2 eggs
2 tablespoons soy sauce
2 packages lumpia skins
1 cup cooking oil

Instructions

1.In a large bowl, combine ground pork, chopped shrimp, water chestnuts, green onions, salt, black pepper, eggs, and soy sauce. Mix well.
2.Lay a lumpia skin on a clean surface and spoon about 1 1/2 tablespoons or more of mixture onto the skin end closest to you.
3.Spread it out into a line. Roll up the skin halfway. Fold the left and right sides of the skin towards the center. Continue to roll until the egg roll is completely wrapped.
4.Heat up oil in a deep pot or wok over medium-high heat.
5.Gently lower the egg rolls into the oil. Fry until golden brown and crispy, for about 3-5 minutes.
6.Remove and drain excess oil on paper towels. Serve hot with dipping sauce of your choice.
