Instructions

1.Preheat the oven to 180°C. Grease a 22cm springform cake tin with butter and sprinkle with sugar.
2.Whisk the egg yolks and caster sugar together in a large bowl until light and fluffy.
3.Beat in the ricotta cheese and the juice and rind of 3 oranges. Add the flour and fold into the mixture.
4.In a separate bowl, whisk the egg whites until stiff peaks form.
5.Fold the egg whites gently into the cake mixture, along with the chopped dried apricots.
6.Pour the mixture into the prepared tin, scatter with sliced almonds and bake for 1 hour or until a skewer inserted into the center of the cake comes out clean.
7.Allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely. Dust with icing sugar to serve.
