Ingredients

6 eggs
2/3 cup caster sugar
1/3 cup cornflour
1/2 cup plain flour
1/3 cup self-raising flour
2 cups coconut , approximately
4 cups icing sugar
1/2 cup cocoa
15 g butter , melted
2/3 cup milk

Instructions

1.Line a 23 cm square cake tin with baking paper.
2.Preheat the oven to 180ºC.
3.In a large bowl, beat the eggs and sugar together until pale and thick.
4.Sift the cornflour, plain flour, and self-raising flour into the egg mixture, and fold until well combined.
5.Pour the mixture into the prepared tin, and bake for 25 minutes or until the cake is springy to the touch.
6.Remove the cake from the oven and allow it to cool in the tin for 5 minutes before turning it out onto a wire rack to cool completely.
7.Once the cake is cool, cut it into 18 equal-sized squares.
8.In a large bowl, mix together the icing sugar and cocoa.
9.Slowly add the melted butter and milk, stirring continuously, until the mixture is smooth and spreadable.
10.Place the coconut in a shallow dish.
11.Using a fork, dip each piece of cake into the icing mixture until it is completely coated.
12.Allow the excess icing to drip off, then roll the cake in the coconut until it is coated on all sides.
13.Place the lamingtons on a wire rack to allow the icing to set before serving.
