500 g frozen shoestring French fries

600 g white fish fillets ( skinless cut into 4cm pieces )
40 g butter
1 leek ( pale section only washed and thinly sliced )
2 tablespoons plain flour
1 1/2 cups skim milk
3/4 cup frozen peas and corn ( thawed )
2 tablespoons chives ( coarsley chopped )

Instructions

1.Preheat oven to 200Celsius/180Celsius fan-forced.

5.Melt butter in a large saucepan over medium-low heat.
6.Cook leek, stirring occasionally, for 5 minutes or until soft.
7.Add flour and cook for 1 minute or until bubbly.
8.Slowly whisk in the milk and remaining lemon juice until smooth.
9.Cook, stirring, for 5 minutes or until sauce thickens.
10.Stir in peas and corn. Cook for 2 minutes or until heated through.
11.Pour sauce mixture over fish. Bake for 20 minutes or until golden and cooked through.
12.Serve pies with shoestring fries and sprinkle with chives.
