1 1 kg rump beef steaks or 3 -4 lamb shanks
salt & pepper
1/4 cup plain flour
2 tablespoons plain flour
1/2 cup water
2 garlic cloves , crushed
1 teaspoon dried rosemary ( or 1 tbsp chopped fresh )
1 teaspoon dried thyme ( or 1 tbsp chopped fresh )
2 dried bay leaves
400 ml Guinness stout ( or more , or other stout-based beer )
2 cups beef stock
2 tablespoons butter
2 -3 tablespoons packed brown sugar
2 onions , cut in wedges
2 carrots , cut in 1-inch pieces
4 stalks celery , chopped
1 large potato , peeled and cut in 1-inch pieces
1/4 cup chopped fresh parsley

Instructions

1.Season the lamb shanks or beef rump steaks with salt and pepper and dust them with 1/4 cup of flour.
2.Heat a large pan over medium-high heat and melt the butter. Brown the beef or lamb shanks in batches for a few minutes until browned on all sides.
3.Transfer the browned meat to a slow cooker.
4.In the same pan, add the onions, garlic, carrots, celery, and potato. Cook for a few minutes until slightly softened.
5.Add 2 tablespoons of flour and stir. Pour in the Guinness and beef stock, scraping up any brown bits from the bottom of the pan. Add the rosemary, thyme, bay leaves, brown sugar, and parsley, then bring it to the boil.
6.Add the vegetables and sauce to the slow cooker and mix with the meat.
7.Cook on low for 6-8 hours or on high for 4-5 hours until the meat is fork-tender and the sauce has thickened.
