Tres Leches Cake, also known as three-milk cake, is a popular Latin American dessert. This lower fat version of the classic cake is a perfect dessert for those who love the sweet and milky flavor of the traditional cake but would like to indulge in a healthier option. The cake is soaked in a sweet and creamy three-milk mixture and topped with a light whipped topping and fresh strawberries to create a balanced and mouthwatering dessert that will leave you feeling satisfied and guilt-free.

Instructions

1.Preheat oven to 350°F. Coat a 9-inch springform pan with nonstick cooking spray.
2.Beat egg yolks and 3/4 cup sugar in a large bowl with an electric mixer on high speed until thick and pale, about 3 minutes. Beat in butter, nonfat milk, and 1 teaspoon vanilla until well combined. Sift flour and baking powder over the mixture and fold in gently.
3.In a clean bowl, beat egg whites with an electric mixer on high speed until soft peaks form. Add the remaining 1/4 cup sugar, 1 tablespoon at a time, and beat until stiff peaks form. Gently fold the egg whites into the batter just until no white streaks remain.
4.Pour the batter into the prepared pan and smooth the top. Bake until a toothpick inserted in the center comes out clean, about 25 minutes. Let cool in the pan for 10 minutes, then transfer to a wire rack and let cool completely.
5.Combine sweetened condensed milk, evaporated milk, half-and-half, and 3 teaspoons vanilla in a medium bowl. Pierce cake all over with a fork and pour the milk mixture over the cake. Cover and refrigerate for at least 4 hours or overnight.
6.To serve, remove sides of the springform pan. Pipe or spoon whipped topping onto the cake and garnish with strawberries.
