1 onion , finely chopped
8 ounces of melissa taco tofu crumbles
1 can enchilada sauce ( Old El Paso )
1 teaspoon cumin
6 ounces fat free cream cheese
4 nonfat whole wheat tortillas ( Misson Brand )
6 ounces soy cheddar cheese

Instructions

1.In a crock pot, combine the chopped onion, melissa taco tofu crumbles, enchilada sauce, and cumin.
2.Cook on high for 2 hours.
3.Preheat oven to 375°F.
4.In a bowl mix the fat free cream cheese with 2 cups of the enchilada sauce.
5.Spread 1/4 cup of the cream cheese mixture on each tortilla.
6.Divide the tofu filling on top and tightly roll them to put in baking dish.
7.Pour remaining sauce on top and sprinkle soy cheddar cheese.
8.Bake for 20 minutes until cheese is melted.
9.Serve hot.
