Ingredients

3 lbs boneless chicken thighs or 3 lbs boneless skinless chicken breasts , cut in strips
1 egg
2 tablespoons water
1 cup flour
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
3 tablespoons ground ginger
2 teaspoons salt
4 tablespoons soya sauce
4 tablespoons rice wine vinegar ( white wine vinegar is fine in a pinch )
1/4 cup water
2 tablespoons toasted sesame seed oil
2 tablespoons hot chili paste ( use ( to taste ) or 2 tablespoons hot chili sauce , if you do n't like it very hot ( use ( to taste )
1/2 teaspoon salt
2 teaspoons cornstarch
3 minced garlic cloves
3 tablespoons freshly grated ginger
1 cup sugar
1/4 cup water
rice ( for serving )

Instructions

1.Preheat the oven to 425°F.
2.Whisk together the egg and water in a shallow dish.
3.In another shallow dish, combine the flour, black pepper, cayenne pepper, ground ginger, and salt.
4.Dip each chicken strip into the egg mixture, then dredge in the seasoned flour mixture, shaking off any excess.
5.Place the chicken strips onto a lightly greased baking sheet.
6.Bake for 15-20 minutes until the chicken is golden brown and crispy.
7.In a small bowl, whisk together the soy sauce, rice wine vinegar, water, sesame oil, hot chili paste or sauce, salt, cornstarch, minced garlic, and grated ginger.
8.Heat the sauce mixture in a small saucepan over medium heat, whisking constantly, until the sauce thickens and becomes glossy.
9.Toss the baked chicken strips in the sauce, making sure each strip is coated evenly.
10.Serve with rice and garnish with sesame seeds and chopped green onions if desired.
