Ingredients

6 onions ( large )
2 cans tomatoes
1 cabbage ( medium )
4 beets
1 stalk celery
4 carrots
1 package Lipton Onion Soup Mix
Lowcal Borscht is a healthy twist on a traditional Russian dish called Borscht. The soup is made with vegetables like beet, cabbage and carrot which give it a unique taste and a vibrant purple color. It is an easy and affordable meal to make and perfect for dinner on a cold winter's night.

Instructions

1.Peel and chop all vegetables into small pieces.
2.Place beet, cabbage, carrot, celery and onion in a large pot and add enough water to cover the vegetables.
3.Bring the pot to boil and then reduce to low heat and let simmer for 1 hour.
4.Add 2 cans of tomato and Lipton Onion Soup Mix and simmer mixture for another 10-15 minutes.
5.Serve hot with fresh herbs and sour cream on top.

CONS
