1 can diced tomatoes

8 ounces rotini pasta
1 can tomato sauce
1/2 cup grated parmesan cheese
ground black pepper
1 cup fat-free ricotta cheese
3 tablespoons chopped fresh basil
2 tablespoons grated parmesan cheese
This low-fat skillet 'lasagna' is a quick and easy weeknight dinner that's perfect for when you're craving the comfort food flavors of traditional lasagna. Instructions

1.In a large skillet, heat 1 teaspoon of olive oil over medium-high heat.
2.Add minced onion and a pinch of salt, and cook for about 5 minutes or until softened.
3.Add minced garlic and cook for an additional minute, until fragrant.
4.Add the ground turkey to the skillet and cook until browned, breaking into small pieces with a wooden spoon as it cooks.
5.Add the diced tomatoes, tomato sauce, red wine, and water to the skillet, along with the dried oregano, basil, thyme, and red pepper flakes. Season with additional salt and black pepper to taste.
6.Bring the sauce to a simmer, then stir in the dry rotini pasta and grated parmesan cheese. Cover and simmer for 10-15 minutes, or until the pasta is tender and most of the liquid has been absorbed.
7.In a medium bowl, mix together the fat-free ricotta cheese, chopped fresh basil, and additional grated parmesan cheese.
8.Serve the skillet lasagna hot, with a dollop of the ricotta mixture on top of each serving.
