Ingredients

1 1/2 cups self raising flour , wholemeal
2 tablespoons butter , melted
1/2 cup skim milk
1/2 cup rolled oats
400 g apple pie filling , chopped roughly
3/4 cup frozen raspberries
1 egg
1 tablespoon raw sugar
Low Fat Oaty Apple Raspberry Muffins are a perfect blend of wholemeal flour, rolled oats, and fruit. These muffins are low in fat and a healthy snack even your kids will love. The sweetness of the apples and raspberries complements the natural nuttiness of wholemeal flour. Healthy doesn't have to be boring - these muffins are packed with deliciousness. You can store them in the freezer for your hectic mornings and pop them in the microwave for a quick breakfast while running out of the door.

Instructions

1.Preheat oven to 180°C/160°C fan-forced. Line a 12-hole silicone or paper muffin tin with muffin cases.
2.Combine flour, oats and sugar in a large bowl.
3.In a separate bowl, whisk together the egg, milk and melted butter.
4.Add chopped apple and raspberries to dry ingredients and toss to coat. Make a well in the centre and add egg mixture.
5.Use a large metal spoon to gently stir until just combined.
6.Spoon mixture evenly into muffin cases. Bake for 25-30 minutes or until a skewer inserted into the centre of a muffin comes out clean.
7.Rest muffins in the tin for 5-10 minutes before transferring onto a wire rack to cool.
