1 lb seedless black grapes
8 ounces plain flour
5 ounces golden caster sugar
1 teaspoon baking powder
5 eggs
3 tablespoons olive oil
icing sugar , for dusting ( optional )

Instructions

1.Preheat the oven to 180°C/gas mark 4.
2.Grease a 9-inch springform cake tin with butter.
3.Wash and rinse the grapes, then leave them to dry while preparing the cake batter.

5.Add the sugar and mix well.
6.Add the eggs and olive oil, and mix until well combined.
7.Fold in the grapes gently.

9.Leave to cool in the tin for 10 minutes.
10.Remove the cake from the tin and allow to cool completely on a wire rack. Dust with icing sugar if desired.
