Low Fat Chocolate Zucchini Muffins are a delicious way to enjoy a chocolate treat while also fitting in some veggies. These muffins are moist and chocolaty with a subtle hint of cinnamon, making them a great snack or breakfast option. With the use of low-fat yogurt and pureed prunes in place of some of the oil and sugar, these muffins have less fat and sugar than traditional muffin recipes. They are also a good choice for those with dietary restrictions as they are free from nuts, dairy (if using a non-dairy milk), and soy. These muffins can be made ahead and stored in an airtight container for up to 3 days or frozen for longer storage.

.Preheat oven to 400°F (200°C). Grease a muffin tin or line with paper liners.

.In a separate bowl, mix together yogurt, pureed prunes, canola oil, beaten eggs, and milk.
.Add wet ingredients to dry ingredients and mix until combined.
.Fold in chocolate chips and shredded zucchini.
.Spoon batter evenly into muffin cups.
