Ingredients

12 whole wheat lasagna noodles , dry
1 teaspoon olive oil
2 tablespoons olive oil
3 cloves garlic , minced
1 eggplant , cubed
1 can Italian herb-flavored tomato sauce
1 cup part-skim ricotta cheese
1 cup low-fat cottage cheese
1 cup shredded part-skim mozzarella cheese
1/4 cup shredded Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1 egg
2 1/2 cups frozen chopped spinach , thawed and squeezed dry

Instructions

1.Preheat oven to 375°F.
2.Cook lasagna noodles according to package directions, then rinse and drain.

5.In a 9x13 inch baking dish, spread 1/2 of the eggplant and tomato sauce mixture on the bottom. Layer 6 lasagna noodles over sauce. Spread 1/2 of the cheese mixture over the noodles. Spread spinach over cheese mixture. Repeat layers, and sprinkle extra mozzarella cheese over the top layer.
6.Bake in preheated oven for 45 minutes, or until cheese is melted and lasagna is heated through. Let it cool for a few minutes before serving.
