2 jars spaghetti sauce
1 lb extra lean ground beef
2 cups fresh spinach leaves
1 large garlic clove
4 1/2 large zucchini
8 ounces ricotta cheese
1 egg
1/4 cup parsley flakes
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese
If you're looking for a low carb alternative to traditional lasagna, this recipe is a great option. Instructions

1.Preheat oven to 375°F
2.In a large skillet over medium-high heat, sauté the ground beef in 1 jar of spaghetti sauce until browned. Add the garlic and spinach and cook until spinach is wilted, about 3-5 minutes
3.Remove from heat and set aside
4.Slice zucchini into thin lasagna noodles, using a mandolin or sharp knife
5.In a medium bowl, mix together ricotta cheese, egg, parsley flakes, and grated parmesan cheese
6.In a greased 9x13 inch baking dish, layer half of the zucchini slices on the bottom
7.Spread 1 jar of spaghetti sauce over the zucchini slices, followed by 1/2 of the ground beef mixture and 1/2 of the ricotta mixture
8.Repeat layers, ending with the remaining 2 cups of shredded mozzarella cheese and a sprinkle of parmesan cheese on top
9.Cover dish with foil, and bake for 45-50 minutes
10.Remove foil and bake for an additional 5-10 minutes to brown the cheese lightly on top
11.Let sit for 10 minutes before serving
