olive oil
1 green onion
1 package shitake mushrooms ( you can use more if you want )
1 package dried porcini mushrooms ( you can use more if you want )
1 package cremini mushrooms ( you can use more if you want )
1/3 cup shredded parmesan cheese
salt
pepper
fresh basil

Instructions

1.Cook the low carb whole wheat pasta according to package instructions. Drain and set aside.
2.While pasta is cooking, prepare the mushrooms. Slice the cremini mushrooms and trim off the stems of the shitake mushrooms. Rinse the dried porcini mushrooms with hot water and let soak for 10 minutes. Squeeze and drain them gently and then roughly chop.
3.Heat olive oil in a pan over medium heat. Add green onion and sauté until fragrant.
4.Add all of the mushrooms and stir occasionally until they release their moisture and are cooked. Add salt and pepper, mix well.
5.Add the cooked pasta into the pan of mushrooms and then toss with shredded parmesan and fresh basil. Serve hot.
