6 sheets toasted nori , seaweed wrappers
2 medium carrots , grated
1 medium zucchini , grated
3 cups chopped cauliflower
2 teaspoons toasted sesame oil
2 1/2 tablespoons mirin or 2 1/2 tablespoons rice wine vinegar
1 teaspoon toasted sesame seeds
3 3 pieces crab or 3 pieces imitation crabmeat

Instructions

1.Preheat your oven to 400 degrees Fahrenheit.

9.Top with a piece of crab or imitation crabmeat.
10.Roll tightly and place it on the baking sheet.
11.Repeat steps 7-10 until all of the ingredients are used.
12.Bake the sushi rolls for 8-10 minutes, until lightly crispy.
13.Cut each sushi roll into six pieces and serve with a sprinkle of toasted sesame seeds.
