Ingredients

2 tablespoons olive oil
1 medium onion , chopped
200 g leeks , sliced
500 g spinach or 500 g swiss chard , sliced
1 tablespoon fresh dill or 1 tablespoon a teaspoon dried dill
1 teaspoon mint , fresh and chopped
2 eggs , lightly beaten ( reserve 2 tablespoons for topping )
200 g feta , broken
salt
pepper
2 cups flour
3 tablespoons olive oil
1/2 cup water
1/2 teaspoon salt
3 tablespoons water ( additional )
Spanakotiropitakia are traditional Greek spinach and feta pies that are usually enjoyed as a snack. Made from filo pastry, spinach, feta cheese, and an array of herbs, they are savory, crispy, and full of flavor. Spanakotiropitakia can be found in cafés, bakeries, and supermarkets throughout Greece and are often enjoyed as a midday or afternoon snack. Though not considered a meal, they are quite versatile and can be enjoyed while on the go, as a light lunch, or during a party or gathering.

Instructions

1.Preheat your oven to 375°F (190C).
2.Heat up 2 tablespoons of olive oil in a skillet on medium heat.
3.Add chopped onions and leeks, stir occasionally until caramelized.
4.Stir in the sliced spinach and dill until wilted.
5.In a separate bowl, mix together the beaten eggs, feta, mint, pepper, and salt to taste.
6.Add the vegetable mixture to the egg mixture and combine well. Set aside.
7.In another large mixing bowl, mix together the flour and salt.
8.Add 3 tablespoons of olive oil and 1/2 cup of water.
9.Mix the pastry until it comes into a ball.
10.Knead the dough on a lightly-floured surface until smooth.
11.Divide the dough into small balls equal to a ping pong ball.
12.Roll out each ball into a very thin round sheet.
13.In the center of each sheet, place a spoonful of the filling.
14.Fold the dough over to form triangular packets with the filling enclosed.
15.Place the formed pies onto a greased baking sheet.
16.Brush them with the reserved egg and water mixture.
17.Bake for 18-20 minutes or until golden brown. Serve hot or at room temperature.

Spinach and feta pies are a great option for vegetarians and easy to make.

CONS

These Greek pastries are not the healthiest of options due to their pastry casing and feta cheese.

However, as they contain vegetables, they can be part of a balanced diet in moderation.
