This Lovely Lavender-Vanilla Bread Pudding is a new take on a classic dessert, and the perfect choice for those who are looking for something unique and refreshing. It's a royal treat for the senses with its delicate lavender flavor, the slight crunch of the raisins, and the sweetness of the bread pudding. This dessert is perfect for special occasions, but can also be enjoyed as a luxurious treat anytime. The elegant flavors and aroma make it a wonderful choice for a romantic dinner, as well!

Instructions

1.Preheat oven to 325°F.
2.In a small saucepan, heat the heavy cream (or buttermilk) and lavender buds over medium heat until it starts to bubble around the edges. Remove from heat and let steep for 10 minutes. Strain the cream mixture to remove the lavender buds, and discard them. Set the cream aside.
3.Spread the softened butter and apricot jam on one side of each bread slice. Cut each slice in half diagonally to create triangles.
4.Arrange the bread triangles in slightly overlapping rows in a buttered 8-inch square baking dish. Sprinkle the raisins over the top.
5.In a medium bowl, whisk together the eggs and sugar until light and fluffy. Add in the milk, vanilla extract (or vanilla bean scrapings), and the reserved steeped cream, whisking until well combined. Pour the mixture over the bread and raisins in the baking dish, making sure that all the bread is coated and submerged in the liquid.
6.Let the pudding sit for 10 minutes so the bread can soak up the mixture. Bake for 50-55 minutes until the top is golden-brown and the pudding is set.
7.Once it’s done, let the pudding cool a bit before dusting it with powdered sugar and sprinkling crushed lavender blossoms over the top.
