Ingredients

300 g fresh lotus root ( tin or fresh )
2 medium potatoes , peeled and cut into 6-8 pieces each
1 large onion , peeled
1/2 inch piece gingerroot ( peeled and grated )
1 tablespoon oil
1 teaspoon cumin seed
1/8 teaspoon asafoetida powder
1/2 teaspoon turmeric powder
1/4 teaspoon chili powder
1 teaspoon coriander powder
salt
1/2 teaspoon garam masala
1 tablespoon chopped coriander leaves ( to garnish )

Instructions

1.Peel and slice the lotus root into thin rounds.
2.Peel and cut potatoes into small cubes.
3.Peel and chop the onion.

5.Add onions and gingerroot, sauté until the onions turn golden brown.
6.Add potatoes, mix well and cook until slightly tender.
7.Add turmeric powder, chili powder, coriander powder, and salt to taste.
8.Mix well and add lotus root slices. Cook on low heat until the vegetables are cooked through.
9.Add 1/2 teaspoon garam masala and mix well. Garnish with coriander leaves before serving.
