Ingredients

2 lbs cut up boneless skinless chicken thighs
1 medium onion , sliced in thin strips
4 garlic cloves , chopped
2 tablespoons fresh ginger ( chopped or grated )
1/2 lime , juice of
salt and pepper
1/2 cup tomato based chili sauce
1 dash Worcestershire sauce
2 tablespoons soy sauce
2 tablespoons peanut butter
1 tablespoon apple cider vinegar
1/4 teaspoon cayenne pepper
3 tablespoons packed brown sugar
1 lime , grated , zest of
1/2 lime , juice of
1 tablespoon chili-garlic sauce
2 fish bouillon cubes , dissolved in 2 tbsp boiling water or 2 tablespoons asian fish sauce
pepper ( no salt )
2 packages rice noodles ( wide flat clear looking )
4 green onions , sliced diagonally
2 cups bean sprouts
2 eggs , scrambled ahead of time
1/2 cup crushed peanuts

Instructions

1.In a large bowl, mix together chicken, onion, garlic, ginger, lime juice, salt and pepper.
2.Heat oil in a large skillet or wok. Add chicken mixture and cook until chicken is browned, about 5 to 7 minutes.
3.In a small bowl, whisk the chili sauce, Worcestershire sauce, soy sauce, peanut butter, apple cider vinegar, cayenne pepper, brown sugar, lime zest, lime juice, chili-garlic sauce, bouillon cubes, and black pepper until well combined.
4.Add the sauce mixture and stir until the chicken mixture is well coated. Cook for 2-3 minutes until the sauce thickens.
5.Add the rice noodles, green onions, bean sprouts, and scrambled eggs. Stir until everything is well combined and let it cook for 2-3 minutes.
6.Add peanuts for garnishing.
