Ingredients

1 pound lean ground beef
1 pound bulk hot Italian sausage
1 onion , chopped
1 pint sliced fresh mushrooms
3 cloves garlic , minced
1 chipotle chile in adobo sauce , chopped
1 can tomato paste
2 cans stewed tomatoes
sea salt and ground black pepper to taste
1/2 cup chopped fresh basil
1/4 cup chopped fresh oregano
2 packages cream cheese , at room temperature
1 pound frozen chopped spinach , thawed
9 lasagna noodles
2 balls of fresh mozzarella , sliced
2 zucchini , thinly sliced lengthwise
1 cup grated Asiago cheese
1 cup grated Parmesan cheese
Lori's Spicy Chipotle Lasagna takes a classic Italian dish and puts a spicy twist on it. The combination of the meat sauce with spicy chipotle chiles, fresh basil and oregano, and a creamy spinach and cream cheese mixture, makes for a layered and flavorful lasagna that is sure to impress. This dish is perfect for a cozy night in or for feeding a crowd, as it can be made ahead of time and reheated.

Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, brown the beef and sausage over medium heat until no longer pink, breaking up the meat as it cooks.
3.Add the onion, mushrooms, garlic, and chipotle chile to the pan, sautéing until the vegetables are softened.
4.Add the tomato paste and stewed tomatoes to the pan, along with salt and black pepper to taste.
5.Simmer the sauce for 10-15 minutes, until the flavors fully meld together.
6.In a large bowl, mix together the basil, oregano, cream cheese, and thawed spinach until well combined.
7.Spread a layer of the meat sauce on the bottom of a 9x13 inch baking dish.
8.Add a layer of lasagna noodles, followed by a layer of the cream cheese and spinach mixture.
9.Add another layer of the meat sauce, followed by a layer of the sliced mozzarella and zucchini.
10.Repeat the layers until all of the ingredients are used up, ending with a layer of meat sauce on top.
11.Sprinkle the Asiago and Parmesan cheese over the top of the lasagna.
12.Bake for 45-50 minutes, until the lasagna is hot and bubbly and the cheese on top is melted and golden brown.
13.Let the lasagna cool for 10-15 minutes before slicing and serving.
