Ingredients

4 1/3 cups flour

flour ( as needed )
3/4 cup butter

8 ounces monterey jack cheese ( shredded )

Instructions

1.In a bowl, whisk together flour and salt then form a well in the center. Add eggs, water, and olive oil and mix until it comes together.
2.Turn out onto a floured surface and knead dough for about 10 minutes until smooth. Let it rest for 30 minutes before using.
3.Brown butter in a deep saucepan and add flour, onion powder, salt, and pepper. Cook for 1 minute.
4.Gradually add chicken stock and milk, whisking continuously until it thickens. Add ham and let it simmer for 10 minutes.
5.In a separate bowl, mix ricotta cheese, eggs, and salt then combine it with the sauerkraut.
6.Preheat oven to 375°F. Roll out the pasta dough to the size of your baking dish.
7.Cook lasagna in salted boiling water for 3-4 minutes and transfer to a dish containing cold water. Pat dry with paper towels.
8.Spoon a layer of sauce in a buttered baking dish, layer lasagna noodles on top, followed by more sauce, and then sauerkraut mixture. Repeat until the dish is full.
9.Sprinkle Monterey jack cheese over the top of the lasagna and cover with foil.
10.Bake for 30 minutes, then remove the foil and bake for an additional 15 minutes until cheese is golden brown.
11.Let it rest for 10-15 minutes before slicing and serving.
