Ingredients

1 - 1 1/2 lb halibut
1/2 cup cornmeal
1/4 cup all-purpose flour
salt and pepper
1 tablespoon garlic powder
1 tablespoon chili powder
4 ounces green cabbage ( shredded )
4 ounces red cabbage ( shredded )
1/4 cup red onion ( julienned )
3/4 cup ranch dressing ( bottled , package , homemade )
1/4 cup mayonnaise ( I used light )
1 tablespoon garlic powder
1 teaspoon ground cumin
1 teaspoon dill weed
1 teaspoon ground pepper
2 tablespoons lime juice
hot sauce ( I use a lot , I like it spicy )
1 1/2 tablespoons jalapenos ( minced )
12 corn tortillas
The Baja fish tacos are mostly served at the beachside and beach-style eateries because of the variety of fresh seafood available. These fish tacos are full of flavor with a crunchy texture and deliciously crisp white fish that gives a perfect taste when mixed with the spices. The fresh cabbage and onions with the ranch and mayo sauce provide an additional flavor that cannot be ignored when combined together with the fish.

Instructions

1.Preheat oven to 400 degrees F. Line a baking sheet with a parchment paper.
2.Cut the halibut into small 1 inch strips.
3.In a shallow bowl, combine cornmeal, all-purpose flour, salt, pepper, garlic powder, and chili powder.
4.Dip each halibut strip into the cornmeal mixture, shaking off any excess.
5.Place the coated halibut strips onto the lined baking sheet.
6.Bake for 18-22 minutes or until golden brown.
7.While the fish is baking, mix the shredded green cabbage, red cabbage, and red onions together in a bowl. Set aside.
8.In a separate bowl, mix together the ranch dressing, mayonnaise, garlic powder, ground cumin, dill weed, ground pepper, lime juice, hot sauce, and minced jalapenos.
9.When the fish is done baking, remove from the oven and let it cool for a couple of minutes.
10.Warm the corn tortillas in the microwave, oven, or on a griddle.
11.Assemble the tacos with a few pieces of the cooked fish, a spoonful of the cabbage and onion mixture, and a drizzle of the ranch-mayo sauce.

CONS

Cornmeal and flour coating is high in carbs which makes it heavy on the stomach and not suitable for people with gluten sensitivities.

Halibut is an excellent source of high-quality protein and heart-healthy fats. It also gives enough omega-3 fatty acids to fight depression and anxiety. On the other hand, the cabbages provide fiber, while the jalapenos offer antioxidants which are considered cancer-fighting agents.
