8 ounces boneless chicken breasts
8 ounces prepared vietnemese meatballs
3 ounces rice vermicelli
1 carrot , julienned
1/3 cucumber , seeded and julienned
1 cup fresh bean sprout ( optional )
1 head leaves lettuce
2 scallions , slivered
3 -4 small fresh hot chili peppers ( bird chiles )
2 -3 tablespoons chopped peanuts
1/2 cup nuoc cham sauce
1/2 cup assorted fresh herb ( basil , cilanto or mint )
1 stalk lemongrass
1 tablespoon oil
3/4 cup water , divided
1/4 cup honey , divided

Instructions

1.Dice the chicken breasts and meatballs and stir-fry them with oil and lemongrass in a pan until they become brown. Then, mix in half of the honey and water and let it cook for a little while.
2.In another pan, boil the vermicelli according to package instructions, then rinse it with cold water and drain.
3.Mix together julienned carrots, cucumbers and fresh bean sprouts along with slivered scallions and chopped peanuts. Chop up different herbs like basil, cilantro and mint.
4.Once all are prepared, add in chicken-meatball mixture, vermicelli and herbs into the bowl and toss lightly. Then, in the same mixing bowl, mix the nuoc cham sauce and remaining honey and water to prepare the dressing. Once the dressing is ready, pour it on the mixture and toss it well. Put this complete mixture on the lettuce leaves, and you're good to go! Serve with fresh chili peppers for a spicy kick.
