Ingredients

4 lbs beef roast ( eye of round is great )
1 medium onion , chopped
2 tablespoons vinegar
1 tablespoon yellow mustard
2 teaspoons sugar
1 teaspoon dry hot mustard
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon sweet Hungarian paprika
1/2 teaspoon unseasoned meat tenderizer
1 dash hot sauce ( I use Crystal )
3/4 cup ketchup
1/4 cup water

Instructions

1.Preheat the oven to 300°F (149°C).
2.Put the chopped onion in the bottom of a roasting pan.
3.In a separate bowl, combine the vinegar, yellow mustard, sugar, dry hot mustard, chili powder, salt, sweet Hungarian paprika, unseasoned meat tenderizer, hot sauce, ketchup, and water to make the barbecue sauce.
4.Place the beef roast on top of the onions and brush it with the barbecue sauce.
5.Cover the pan with foil and cook in the preheated oven for 3 hours.
6.Remove the foil and baste the beef with more barbecue sauce.
7.Increase the oven temperature to 350°F (177°C) and cook for an additional 30 minutes or until the beef is cooked to your desired doneness.
8.Remove the roast from the oven, let it rest for 5 minutes, and then slice and serve.
