Ingredients

2 maine lobsters
5 tablespoons unsalted butter
1/4 cup all-purpose flour
3 tablespoons fresh lemon juice
2 tablespoons dry sherry
1 tablespoon olive oil
1 1/2 cups thinly sliced yellow onions
1 1/2 cups thinly sliced yellow bell peppers
1 1/2 cups thinly sliced red bell peppers
1 cup thinly sliced seeded poblano pepper
1 tablespoon minced shallot
2 teaspoons minced garlic
1 cup peeled coarsely chopped , and seeded tomatoes
4 1/2 teaspoons tomato paste
1 tablespoon salt
2 teaspoons white pepper
5 cups fish stock
This Lobster-tomato Stew is a classic Maine dish that is perfect for any seafood or soup lover. Instructions

1.Fill a large saucepan with enough salted water to come up to 2 inches and bring to a boil over high heat.
2.Add the lobsters to the boiling water and cook for 8 minutes. drain the lobsters and reserve the broth, let the lobsters cool.
3.Remove the meat of the lobsters, discard shells, and roughly chop the meat into bite-sized pieces.
4.In a large pot, melt the butter over medium heat. whisk in the flour, and cook stirring occasionally, for 2 minutes.
5.Add lemon juice, sherry, and olive oil. Mix well.
6.Add onions and cook until they become soft (for about 10 minutes).
7.Add bell peppers, poblano pepper, shallot, and garlic. Cook for about 20 minutes
8.In a blender, puree tomatoes and tomato paste until smooth. Add it to the pot and stir well.
9.Add reserved lobster broth and bring it to a boil, reduce heat and simmer, stirring occasionally, for 30 minutes.
10.Add the chopped lobster meat and simmer for 5 more minutes.
11.Season with salt and white pepper.
12.Let it rest for a few minutes before serving.
