Ingredients

1 1/2 pounds cooked lobster tails - peeled , shredded and chilled
1 medium head garlic
1/2 large onion
salt to taste
1/3 cup extra virgin olive oil
2 large red bell peppers
1 large portobello mushroom , chopped
1/2 lemon , juiced
1 tablespoon fennel seed
1 tablespoon ketchup
1 tablespoon cider vinegar
ground black pepper to taste
4 cups mixed salad greens

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.Cut the head off the garlic and slice the onion into 1/4 inch thick rounds. Place the garlic and onion on a baking sheet, sprinkle with salt and drizzle with olive oil.
3.Roast the garlic and onion for 15-20 minutes, or until golden brown and caramelized. Remove from the oven and set aside to cool.
4.Preheat the grill to medium-high heat. Slice the red peppers into quarters, remove the seeds and membranes, and brush with olive oil.
5.Grill the red peppers for 5-7 minutes per side, or until they are slightly charred. Remove from the grill and slice into thin strips.
6.In a small bowl, mix together the lemon juice, fennel seed, ketchup, and vinegar. Season with salt and black pepper to taste.
7.In a large bowl, combine the chilled lobster meat, roasted garlic and onion, grilled red peppers, and chopped portobello mushroom.
8.Pour the dressing over the salad and toss gently to combine. Serve the lobster salad over a bed of mixed salad greens.
