Ingredients

1 small fresh pineapple
1 onion , chopped medium
1/2 bell pepper , chopped medium ( bell peppers should be different colors )
1/2 bell pepper , chopped medium ( bell peppers should be different colors )
4 mushrooms , quartered
1 rock lobster tail
2 tablespoons clarified butter
1 dash pico-pepper sauce
1 tablespoon brandy
1 tablespoon Grand Marnier

Instructions

1.Preheat oven to 375F.
2.Cut the pineapple in half lengthwise and scoop out the fruit, leaving about 1/2-inch shell.
3.Chop the scooped out pineapple and remove any remaining core.
4.In a large saute pan, heat clarified butter then add onions and saute for 1-2 minutes until translucent.
5.Add the chopped pineapple and bell peppers, then saute for 3-4 minutes.
6.Add the sliced rock lobster and cook for another minute until just barely done.
7.Split the saute mixture between the two pineapple halves.
8.Sprinkle some chopped mushroom pieces on top of each pineapple half.
9.Drizzle with pico-pepper sauce,
10.Splash with brandy and Grand Marnier, then bake for 10-15 minutes. Serve and enjoy.
