Ingredients

800 g black-eyed peas ( beans , canned )
2 tablespoons cooking oil
3 large onions , sliced
2 large tomatoes , chopped
2 tablespoons garlic paste
1 tablespoon ginger paste
2 teaspoons coriander powder
1 teaspoon cumin powder
1/2 teaspoon red chili powder
1/4 teaspoon turmeric powder
2 teaspoons garam masala
2 tablespoons tamarind pulp ( soak a walnut-sized ball of tamarind in hot water and squeeze out pulp )
1 tablespoon gingerroot , julienned
2 tablespoons fresh coriander leaves , chopped fine
Lobia, also known as black-eyed bean curry, is a popular dish in Indian and Pakistani cuisine. Instructions

1.Rinse canned black-eyed peas with cold water and set aside.
2.Heat cooking oil in a large pan and add onions. Cook for 5-7 minutes until they start to soften and turn golden.
3.Add tomatoes, garlic paste, and ginger paste. Stir well and cook for another 3-4 minutes.
4.Add coriander powder, cumin powder, red chili powder, turmeric powder, and garam masala. Stir everything together until fragrant.
5.Add canned black-eyed peas and tamarind pulp. Mix well to combine.
6.Bring the mixture to a boil over medium heat.
7.Once it boils, reduce heat to medium-low and let it simmer for 10-15 minutes, stirring occasionally.
8.Add gingerroot and chopped coriander leaves. Stir and simmer for another 1-2 minutes.
9.Serve hot with rice or naan bread.
