Instructions

1.In a non-stick skillet, melt butter over medium heat. Add finely chopped onion and cook until soft, about 3-4 minutes.
2.Meanwhile, in a medium bowl, lightly beat the eggs. Add sliced green onions, cream cheese, smoked salmon and mozzarella cheese to the bowl and mix well.
3.Pour the egg mixture into the skillet with the onion and let cook for 3-4 minutes, or until the bottom is set.
4.Using a spatula, carefully fold the omelet in half and continue cooking for another 2-3 minutes, or until the eggs are cooked through.
5.Slide the omelet onto a serving plate and top with caviar. Enjoy!
