Ingredients

2 tablespoons vegetable oil
8 Chinese black mushrooms
1/2 cup dried black fungus ( cloud ears )
1/2 cup bamboo shoot , sliced
8 fresh water chestnuts , peeled and cut into quarters
1 carrot , peeled & julienned lengthwise
2 cups napa cabbage , torn into small pieces
1 cup vegetable broth or 1 cup chicken broth
2 ounces rice noodles ( bean thread , Chinese vermicelli )
1 cup firm tofu , cut into 1/2-inch cubes
8 snow peas
2 cups fresh bean sprouts
2 tablespoons soy sauce ( low-sodium preferred )
1 tablespoon cornstarch
2 teaspoons cold water
1 teaspoon sesame oil
Lo Han Jai, also known as Buddha's Delight, is a popular Chinese vegetarian dish that is made with a variety of vegetables, mushrooms, and tofu. The dish is typically served in Buddhist vegetarian restaurants and is believed to have originated from the Buddhist monasteries in China. The dish is named after the arhat, or Buddhist saint, Luohan, who is said to have introduced the recipe to the monasteries. Instructions

1.Rehydrate the black mushrooms and black fungus in separate bowls using boiling water. Once softened, rinse and cut into thin slices.
2.In a wok or large pot, heat two tablespoons of vegetable oil over medium-high heat. Add the mushrooms, black fungus, bamboo shoots, water chestnuts, and carrot, and stir-fry for 2-3 minutes.
3.Add the torn napa cabbage and vegetable or chicken broth. Simmer for 5-7 minutes until the vegetables are tender.
4.Soak the rice noodles in boiled water for 3-5 minutes or until tender, then drain.
5.Add the cubed tofu and snow peas to the pot and simmer for 2-3 minutes.
6.In a small bowl, mix the soy sauce, cornstarch, cold water, and sesame oil. Add to the pot and stir well.
7.Add the rice noodles and bean sprouts to the pot. Simmer for 2-3 more minutes until heated through. Serve hot.
