Ingredients

2 lbs chicken breasts , boneless and skinless
1/2 cup Mexican seasoning ( Mexican Seasoning Mix , I used the whole recipe minus the red peppers )
1 small onion , chopped finely ( optional )
24 corn tortillas
1 1/2 lbs cheese , grated ( I use mexican combination or monterey jack )
28 ounces red enchilada sauce ( I use mild or use medium if you like things hotter , I use El Pato brand )
24 ounces sour cream ( I have used regular and low-fat )
oil for frying tortilla

Instructions

1.Preheat oven to 350°F.
2.Coat chicken breasts in Mexican seasoning mix, ensuring they are well covered.
3.Bake the chicken in a preheated oven for 25 minutes or until fully cooked.
4.Let the chicken cool, then shred it using a fork or your fingers.
5.In a frying pan, heat up the oil.
6.Fry the tortillas one at a time until just slightly crisp, then bring out and let dry a bit.
7.Mix the chicken, sour cream, and chopped onions in a bowl.
8.Preheat the oven to 375°F.
9.Pour 1/4 of the enchilada sauce into the bottom of a 9x13-inch baking dish.
10.Take the tortillas and stuff them with the chicken mixture, then place them in the dish seam side down.
11.Pour the remaining enchilada sauce over the tortillas, then sprinkle the grated cheese on top.
12.Bake the enchiladas for 25-30 minutes or until heated through and the cheese is melted and bubbly.
