Ingredients

4 1/2 lbs potatoes , 2 kilos de papas
1 finely diced white onion , 1 cebolla blanca finamente picada
4 tablespoons oil , 4 cucharadas de aceite
1/2 cup grated cheese , 1/2 de queso rallado
2 egg yolks , 2 yemas de huevo
salt , sal al gusto
Llapingachos is a traditional Ecuadorian dish made with mashed potatoes stuffed with cheese and served with a peanut sauce and a side of lettuce and tomato salad. This hearty and comforting food is a staple in the Andean region and can be prepared in different ways, depending on the region. Some recipes include peanut butter or other types of fillings, such as meat or vegetables. It is not only easy to make but also a great way to use leftovers. Instructions

1.Wash, peel and cut the potatoes into pieces and boil them until they are soft.
2.Once the potatoes are ready, mash them and add the grated cheese, diced onion, salt and egg yolks, kneading with your hands until obtaining a homogeneous mixture.
3.Divide the potato mixture into portions, and with the help of your hands, give them a circular, flattened shape, making a small hole in the center of each one.
4.In a frying pan, heat a little oil over medium heat and fry the potato cakes until they are golden brown on each side.
5.Serve the llapingachos with a side salad or avocado slices.
