Ingredients

1 1/2 lbs pork fat ( Cut into thin strips like bacon )
1 lb chicken liver , chopped ( unless you can find duck or goose liver )
1 lb ground veal
1 lb ground pork
1 lb ham , chopped finely
3 eggs
4 garlic cloves
1/2 cup heavy cream
1/2 cup cognac ( or Brandy )
4 tablespoons salt
1/2 teaspoon allspice
1/2 tablespoon cinnamon
1/2 cup flour
1 tablespoon black pepper
2 bay leaves

Instructions

1.In a large mixing bowl, combine the pork fat strips, ground veal, ground pork, and finely chopped ham.
2.In a separate bowl, beat the eggs and add them to the pork mixture.
3.Add the chopped chicken liver to the bowl and mix the ingredients well.
4.Crush the garlic cloves and mix them into the meat mixture along with the heavy cream, cognac, salt, allspice, cinnamon, flour, and black pepper, until well combined.
5.Grease a baking dish and line it with the two bay leaves.
6.Pour the meat mixture into the baking dish and cover it with a foil.
7.Bake at 325°F for 1 hour 30 minutes or until a meat thermometer reads 160°F. Remove the foil and bake for an additional 30 minutes.
8.Once done, let the pate cool. Remove the bay leaves and drain off excess fat.
9.Place a weight topped with a piece of cardboard on top to compress the pate.
10.Cover and refrigerate overnight or for up to three days. Serve chilled and enjoy!
