Ingredients

200 g kumara
200 g pumpkin
200 g beef liver
1 tablespoon flour
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup white wine
1 teaspoon marmite
1 teaspoon garlic , crushed
1 onion
Liver and Onions With Roast Veges is a classic dish that has been around for centuries. Instructions

1.Preheat the oven to 200C / 180C fan-forced.
2.Peel and cut the kumara and pumpkin into small pieces.
3.Spread them on a baking tray and drizzle oil over them. Roast in the oven for 30 minutes.
4.Cut the liver into pieces and toss in flour seasoned with salt and pepper.
5.Heat large frying pan over high heat. Add oil and cook the meat in small batches, removing it as it browns.
6.Reduce the heat of the pan. In the same pan, add onions and cook until softened.
7.Stir in garlic and cook for a minute.
8.Add white wine and cook for 2 minutes.
9.Add liver, roast vegetables, Marmite and salt plus pepper.
10.Bring to boil then reduce heat and let it simmer for a few minutes.
