Ingredients

225 g plain flour
150 g butter
1 egg
250 g baby spinach leaves
50 g sorrel
parsley , basil , chives and tarragon ( A small bunch each of herb )
garlic clove
2 eggs
300 ml single cream
salt and pepper , garlic and nutmeg
300 g goat 's cheese

Instructions

1.Gather all your ingredients and preheat your oven to 400°F (204°C).
2.In a large mixing bowl, add the plain flour and butter. Mix until they resemble breadcrumb-like texture. Then, add one egg and mix until they come together to form a pastry dough. Refrigerate the dough for at least 30 mins.
3.While the pastry is resting, wash the baby spinach leaves and sorrel. Remove any excess water.
4.Finely chop the parsley, basil, chives, tarragon, and garlic cloves. Add the chopped herbs to the washed green leaves.
5.In another mixing bowl, whisk together the eggs, single cream, salt, and pepper. Add in a pinch of nutmeg and mix well.
6.Take the pastry dough out of the fridge and roll out on a lightly floured surface. Divide the pastry dough equally into six. Grease six tart tins with butter and lay the six rounds of pastry dough.
7.Divide the mixed herb and leaves mixture into the six pastry cases evenly. Crumble some goat's cheese on top of the herbs mixture.
8.Finally, pour the egg and cream mixture over the top evenly.
9.Bake the tarts for 25-30 mins until they are golden brown.
10.Once done, let them cool down for 10 minutes before removing them from the tart tins and serving them. Enjoy!
