6 medium scallions , trim and include white and green
1/3 cup packed fresh cilantro
1 stalk lemongrass ( can use lemon zest from 1/2 lemon )

1 egg , slightly beaten
1/4 cup breadcrumbs ( plain , dried )

2 tablespoons sesame oil
1/2 cup coconut milk ( or whatever is remaining in the can )
1/4 cup peanut sauce
1 tablespoon raw sugar ( turbinado )

Instructions

1.Preheat the oven to 350 degrees F.
2.In a food processor, pulse the peanut butter, garlic, ginger, hot pepper, peanut oil, soy sauce, Splenda, vinegar, sesame oil, and tea until well blended.
3.Add the scallions, cilantro, lemongrass, and garlic and pulse until coarsely chopped.
4.In a large mixing bowl, combine the turkey, brown rice, coconut milk, egg, and breadcrumb.
5.Mix the herb paste into the turkey mixture and shape it into 6 oval-shaped loaves.
6.Place the loaves on a greased baking sheet and bake for 15 minutes.
7.In a small bowl, whisk together the peanut sauce, sesame oil, coconut milk, and raw sugar.
8.Brush the sauce over the turkey loaves and bake for another 10-15 minutes, or until cooked through.
