125 g soft butter , chopped
165 g caster sugar
1/2 teaspoon vanilla extract
2 eggs
185 g plain flour
2 1/2 teaspoons baking powder
1/4 cup milk
250 g flaked coconut
500 g icing sugar , sifted
50 g Dutch-processed cocoa powder
40 g soft butter

140 ml boiling water

Instructions

1.Preheat oven to 180°C. Grease and line cake tin.
2.Beat the butter, sugar and vanilla in a large bowl until light and creamy.
3.Add the eggs one at a time, beating well between each addition.
4.Sift the flour and baking powder over the butter mixture. Add the milk. Fold until combined.
5.Spoon the mixture into the prepared tin and smooth the surface. Bake for 30-35 minutes or until a skewer inserted into the center comes out clean.
6.To make the icing, combine the icing sugar, cocoa, butter, vanilla and cognac in a large bowl. Slowly add boiling water to create a smooth, thin icing. Stir in the coconut.
7.Cut the cake into 3cm squares. Using 2 forks, dip each square into the icing, allowing any excess to drain off, then roll in coconut. Place on a wire rack over a baking tray and set aside for 1 hour or until the icing sets.
