1 lb Italian flat beans
water , as needed
1 teaspoon coarse salt ( to taste )
4 eggs , lightly beaten
1/2 cup all-purpose flour
1/2 teaspoon coarse salt ( to taste )
1/4 teaspoon white pepper ( to taste )
1 cup olive oil ( or as needed for frying )

Instructions

1.Rinse and trim the stem ends off the beans and place them into a saucepan with enough water to cover.
2.Add coarse salt to water and bring to a boil.
3.Cook until the beans are tender, but still crisp. Drain and set aside.
4.In a bowl, whisk together flour, salt, and white pepper. Stir in the beaten eggs. Your batter should be thick enough to coat the beans.
5.Heat olive oil in a deep skillet over medium-high heat.
6.Taking care not to crowd the pan, dip each bean into the batter and then quickly add to the hot oil.
7.Fry until golden brown on all sides, about 4-5 minutes.
8.Remove with a slotted spoon and drain on paper towels. Sprinkle with more coarse salt to taste, and serve hot.
