Ingredients

2 tablespoons canola oil
1 lb boneless beef chuck or 1 lb beef round steak , cut into 1 inch pieces
1 1/2 teaspoons salt
3 tablespoons butter
1 onion , chopped
6 garlic cloves , chopped
8 cups beef broth
2 bay leaves
2 lbs beets , peeled and cut into 1/4 inch pieces
1 cup carrot , thinly sliced
2 lbs potatoes , peeled and cut into 1/2 inch pieces
4 cups cabbage , thinly sliced
5 tablespoons lemon juice
fresh ground black pepper

Instructions

1.In a large pot, heat the canola oil over medium-high heat. Add the beef and salt, and cook until browned on all sides. Remove the beef from the pot and set aside.
2.In the same pot, melt the butter and add the onion and garlic. Cook until the onion is translucent.
3.Pour in the beef broth, bay leaves, and the browned beef. Bring to a boil and reduce heat to low. Simmer for about an hour.
4.Add the beets, carrots, potatoes, and cabbage. Simmer for another hour or until the vegetables are tender.
5.Stir in the lemon juice and season with black pepper. Serve with a dollop of sour cream on top.
