Ingredients

2 eggplants ( large , the longer the better )
2 lbs ground meat ( i prefer 1lb beef , 1lb lamb )
2 onions
2 -3 garlic cloves ( finely minced )
1 egg
2 tomatoes ( large , firm )
6 ounces tomato paste ( can )
14 ounces beef ( can ) or 14 ounces chicken stock ( can )
1/2 cup lemon juice
salt
pepper
turmeric ( or curry powder )
spices ( any others you desire , I like CUMIN , CORIANDER , etc . )
oil ( canola , vegetable , or olive )

Instructions

1.Preheat oven to 350F.
2.Slice off eggplant stem and remove about 1/2 inch from the top of each eggplant.
3.Wash the eggplants and cut a small slice lengthwise down the center of each one without cutting through to the bottom, creating an opening for the stuffing.
4.In a large mixing bowl, combine the ground meat, finely chopped onions, garlic, egg, tomato paste, spices, salt, pepper, and turmeric or curry powder. Mix until all ingredients are well combined.
5.Stuff the eggplants with as much meat mixture as they can hold.
6.Place the stuffed eggplants in a baking dish or on a baking sheet lined with parchment paper or foil.
7.Cut the tomatoes into thin slices and place them on top of the stuffed eggplants.
8.Pour the beef or chicken stock into the baking dish or over the eggplants.
9.Cover the dish with foil and bake for about 45 minutes.
10.Remove the foil, add lemon juice to the eggplants, and bake for another 15-20 minutes until the eggplants are tender and the stuffing is cooked through.
