Instructions

1.In a large pot, add the pork and chicken bouillon cubes. Cover with 8 cups of water and simmer for 2-3 hours until tender.
2.Drain the meat and reserve the stock.
3.In a skillet, heat 4 tablespoons of corn oil over medium-high heat. Add the cubed pork and cook until browned. Transfer the pork to a plate and set aside.
4.In the same skillet, add 4 tablespoons of corn oil and heat over medium-high heat. Add the diced bell pepper and sweet onion and sauté for 3-5 minutes until tender.
5.Add chili powder, garlic powder, onion powder, sugar, chili flakes, Lawry’s Seasoned Salt, and cumin powder to the skillet. Stir well and cook for 1-2 minutes.
6.Add the browned pork and reserved stock to the skillet. Stir well and bring to a boil. Simmer for 15-20 minutes until the sauce thickens.
7.In a separate skillet, heat 4 tablespoons of corn oil over medium-high heat. Add the corn tortilla strips and fry until crispy. Transfer to a plate lined with paper towels.
8.In a small pot, add 4 cups of water and 2 cups of rice. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the rice is cooked.
9.Serve the pork mixture over a bed of cooked rice. Garnish with fried tortilla strips.
