Ingredients

1 lb ground lean pork
4 dried shiitake mushrooms , soaked in warm water for at least 10 mins
1 bunch green onion , chopped
1 teaspoon ginger ( fresh )
1 tablespoon cornstarch
3 tablespoons oyster sauce
1 teaspoon salt
2 tablespoons dried shrimp ( optional )
2 -3 lbs napa cabbage , chop to fit in pot
1 egg , lightly beaten
7 ounces firm tofu , diced
4 tablespoons soy sauce , divided
4 teaspoons cooking wine , divided
1/8 teaspoon pepper
5 cups chicken stock
1 cup water
1/2 teaspoon sesame oil
2 teaspoons brown sugar

Instructions

1.In a large bowl, mix the ground pork, shiitake mushrooms, green onion, fresh ginger, cornstarch, oyster sauce, salt, dried shrimp (if using), 1 tablespoon of soy sauce, 2 teaspoons of cooking wine, and pepper until well combined.
2.Heat a large pot of water to boiling and add the napa cabbage. Cook for 3-5 minutes, then drain and squeeze out as much water as possible.
3.In a separate bowl, mix together the beaten egg, diced tofu, 3 tablespoons of soy sauce, 2 teaspoons of cooking wine, sesame oil, and brown sugar.
4.In a large pot or casserole dish, arrange the cabbage leaves around the edge of the pot. Form the pork mixture into large meatballs (called lion's heads) and place them in the center of the pot.
5.Pour the egg and tofu mixture over the meatballs, then pour in the chicken stock and water.
6.Cover the pot and simmer on medium-low heat for 45-60 minutes, until the meatballs are cooked through and the cabbage is tender.
7.Serve hot with rice or noodles.
