Ingredients

200 g coarse flour
200 g cold butter
100 g sugar
100 g ground hazelnuts
40 g breadcrumbs
1 teaspoon cinnamon
1 egg
60 g redcurrant jam
1 tablespoon rum

Instructions

1.Preheat oven to 350°F and line a 9x9 inch baking dish with parchment paper.
2.In a large mixing bowl, combine coarse flour, sugar, ground hazelnuts, breadcrumbs and cinnamon.
3.Add cold butter and mix until crumbly
4.Stir in egg and mix until well combined.
5.Reserving 1/4 of the dough for topping, press the remaining dough into the prepared baking dish.
6.In a separate bowl, mix together redcurrant jam and rum.
7.Spread this mixture over the dough in the baking dish.
8.Place spoonfuls of the remaining dough over the jam layer, evenly spreading it out.
9.Bake for 30-35 minutes or until the top is lightly golden.
10.Remove from oven and let cool to room temperature.
11.Sprinkle powdered sugar over the top before slicing and serving.
